Tyohara Utsav: Kal Kal recipe
We?ve been getting recipes galore as part of our Tyohara Utsav festival. Many of these are recipes that have been handed down ? from mom to daughter or from the mother-in-law to the daughter-in-law. Here?s an eternal Christmas favourite that?s popular in the house of talented artist and mom of two Meenal Joseph, who learnt it from her in laws, after marriage.
Kal Kal, a Christmas favourite
KAL KAL
Ingredients
Maida / All purpose flour: ½ kg
Thin Rava / semolina: 1/8 kg
Salt, pinch
Ground sugar: 1 ½ cup after grinding
Cinnamon powder: ¼ tsp
Milk/ coconut milk: 1 cup for kneading
Ghee/ butter: 2tbsp
Oil for frying
Note : Sugar can be increased or decreased a little as per taste.
Instead of rava, add 1 egg + pinch of baking powder and increase the maida to 1 ½ kg and use coconut milk to knead if you wish
The proportion of maida : rava is 1: ¼
Method
Mix all ingredients except milk and oil.
Add warm milk/ coconut milk little by little and knead into a hard dough.
Divide into tiny portions (marble size)
Spread these on the back of a fork and then roll.
Heat oil in a kadai / round bottom vessel.
Once the oil is hot add the kul kuls (not too many) and fry on medium heat.
Fry till golden brown.
Sometimes the kul kuls maybe soft but golden brown while removing
from oil. But they harden after cool.
